It is possible to salt mushrooms with two of the most common methods: cold and hot. Choose the one that is most to your liking and suits your circumstances, as well as the harvested variety of mushrooms. For example, cold salting is optimal for blacks, and hot salting is fine for whites. Before salting the mushrooms, in any case, pre-prepare them in a certain way. First, rinse each one under the tap, inspect, and cut off all the damaged areas with a knife, primarily those affected by wormholes.
If you plan to salt mushrooms with a cold method, be sure to soak them. The black variety of these mushrooms, which contains a bitter milky juice, is especially in need of such a procedure. Before soaking, clean the mushrooms from the accumulated debris. The water where you put them should not be too warm or, conversely, completely icy. Change it twice or three times a day. The duration of soaking depends on the subspecies of mushrooms, and the maximum is 5 days. Then proceed directly to pickle the mushrooms of the bunch.
Traditionally, it is worth salting mushrooms in wooden barrels, but it is acceptable to use pre-sterilized jars. Take the amount of salt at the rate of about 40 g per kilogram of the main product. Add a little salt to the bottom of the container, add cherry, currant leaves or horseradish, peppercorns, and, if desired, a couple of garlic cloves. To salt the mushrooms, stack them as tightly as possible in no more than 5-6 cm layers, alternating with spices. Cover the last mushroom layer with leaves, then with gauze or cloth.
Now, to successfully salt the mushrooms, place sterilized wooden mugs of suitable diameter on each container with a heavier load on top of them. Place the blanks in a cool place: refrigerator or cellar. The product will be ready in a month and a half. If you plan to salt the mushrooms in a hot way, they will have to be boiled in salt water for some time after preliminary rinsing and cleaning from contamination. Take small portions of the mushrooms, changing the water for each of them. It takes approximately half an hour for each batch to cook.

After placing the product in them, immerse it in a container with boiling salted liquid and leave it for at least a quarter of an hour. Then tamp into sterilized jars or other suitable containers with a similar amount of spices and salt. Also, after tamping them, place them under pressure in the cold. Such salting will take only 6-8 days.
